Amazing Recipes : Potato Leek Soup with bacon skewer

Recipe Yields 64 oz

Ingredients

  • Onion yellow - 8 oz (sm. dice)
  • Celery - 8 oz (sm. dice)
  • Potato - 16 oz (med. dice)
  • Veg Base - 1 oz
  • White Leek- 1 bunch (Sliced thin)
  • Heavy Cream - 16 oz
  • Salt and Pepper - to taste
  • Bacon - 21 each
  • Bamboo Knots - 64

Directions

- Sweat onion, celery together until translucent. 

-Add 32 oz of water and diced potatoes & leeks 

-Cook until tender.

-Blend until smooth

-Finish with warm cream

-Salt and Pepper to taste

- Skewer bacon pieces (cut to fit on rib of glass)

-Bake until crisp (6-8 minutes @ 350°)
