Chef Eric and His Dishes For 2nd Story Collab

The kitchen to Amazing Edibles Catering is a classic Chicago industrial space, with an exposed brick wall and windows high above that cast natural light on the stainless steel tables below. Beyond the windows is the Chicago skyline, but one needs not gaze out into the distance to admire the architecture due to the “skyline” in our very kitchen. Spices and boxes are stacked multicolored hues of red and brown and taupe, all sitting on the metal shelves like scaffolding around the buildings in Old Town. The silver and black ovens with the smoke stack stretching up through the height of the space out out the ceiling, like a skyscraper facade. And, of course, the Lightfoot in the kitchen, the leader bouncing from fridge, to stove-top, to prep-station, is our very own Chef Eric.

But instead of sitting in the kitchen, today I stand off camera in the hallway of AEC as Caitlin and Eric sit opposite each other, ready to film. What’s interesting about this collaboration is that each story has a curated course brought together by the Chef to best compliment emotions, conflicts, and themes the stories create. Between the background noises of workplace-chatter, the metronomic beeping of the security system, and the construction going on just outside the AEC doors, Eric discusses his choices of meals and what they meant to him.

As always, Chef Eric has a good attitude. Rarely has his breezy demeanor been broken, and he is quick to assure that whatever the situation is, there is a good humored solution. He carries this on camera, keeping it casual and even going off script in his enjoyment for the collaboration.

Chef Eric is certainly one to let food speak for itself, so it is only fitting that his meals will be complimentary by the amazing storytellers at 2nd story. It is our hope that with each meal, the audience is fully immersed into the world of their creator; to feel a connection to the art on the stage, as well as the art on the plate.
