Amazing Summer Recipes

For a lot of people, the best season of the year has arrived. The hot weather and the summer breeze creates the perfect atmosphere to go out and enjoy the day with friends and family. For this summer, chef Anthony is sharing some favorite recipes to help make your summer more Amazing.
Zucchini Turkey Patties
Let’s start with an entree. The zucchini patties are not only delicious but also a healthy option to prepare when you get together with friends and family. It’s easy and delicious.
Ingredients:
1 pound ground turkey
8 oz. shredded zucchini
1 egg
2 cloves garlic, minced
¼ cup minced cilantro
¼ cup minced parsley
4 Tbsp. minced green onion
1 Tbsp. ground coriander
½ tsp. ground cayenne
1 tsp. ground cumin
1 tsp. kosher salt
½ tsp. ground black pepper
Method:
Mix all the ingredients together. Form into loose 4 ounce patties. Brown on both sides. Finish in the oven until the internal temperature reaches 165 degrees (about 6 minutes).
Raspberry Mousse
To escape from the heat, there’s nothing better than a good refreshing dessert. That’s why we would like to share this amazing raspberry mousse recipe.
Ingredients:
1 1/4 cup cold water
2 1/2 cup boiling water
10 teaspoons gelatin
5 oz. lemon juice
1 1/4 cup organic sugar
6 1/4 cups fresh raspberries
10 cups heavy cream
1 tsp. vanilla extract
Method:
In a small saucepan, add cold water. Mix in gelatin and allow to sit for 5 minutes. Stir in boiling water, vanilla extract, sugar, lemon juice, and raspberries. Bring to boil on medium heat. Turn down the heat to low and boil for 5 minutes. Pour mixture into a blender or food processor and blend until smooth. Allow to cool 10 minutes. In a large bowl, add whipping cream and beat with an electric mixer until stiff peaks form. Fold in the raspberry mixture and allow to cool in the refrigerator for 1 hour.
Caipirinha
This traditional and tropical cocktail is originally from Brazil and is made with a mix of muddled limes (or other fruit), sugar, crushed ice, and Cachaça, a Brazilian sugarcane liquor. However, it can also be prepared with vodka or rum. Personally, I like it best with vodka.
Ingredients:
1-2 limes, sliced in half lengthwise and the pith removed. Can be cut in quarters after the pith is removed
1-2 tablespoons of sugar
2 ounces of cachaca or vodka
1 tablespoon of fresh lime juice – optional
Crushed ice
To garnish: lime slices
Method:
1. Either directly in a short glass or in a cocktail shaker, combine the lime halves or quarters with the sugar and use a muddler to gently crush and squeeze out the lime juice from the limes.
2. Add the alcohol (cachaca, vodka or rum) and lime juice, stir or shake well. If using a cocktail shaker pour the drink, including the muddled limes, into a short glass with crushed ice. If making the drink directly in the glass, add crushed ice and stir.
3. Serve immediately garnished with a lime slice.
