The Passionfruit Mojito by Frieda’s Inc.
Whether it is to feel relaxed after a long tiring day at work or to serve at a party, this recipe will be a great way to start off spring after the never-ending Chicago winter.
Method:
In a tall glass, muddle mint leaves with sugar and lime juice.
Stir in passionfruit, club soda and rum.
Add crushed ice and garnish with lime wedge & mint sprig.
Serve immediately.
Ingredients:
1 oz. lime juice
2 oz. passionfruit (pulp & seeds)
3 oz. club soda
1 oz. white or light rum
6 mint leaves
2 tbsp. sugar
Handful crushed ice
Lime wedges and mint sprigs – garnish
The Moroccan Rainbow Carrot Salad by Frieda’s Inc.

Method:
Using a vegetable peeler, shave each carrot lengthwise into long, thin strips.
Place carrot shavings in medium bowl with ice water for 10 minutes (to curl them).
Drain well and pat dry.
In a Mason jar or bowl, combine Meyer lemon juice, lemon zest, sugar, garlic, olive oil, salt and pepper.
Shake or stir well to combine.
Place shaved carrots into serving bowl.
Top it with pomegranate seeds, pistachios, and parsley.
Toss with Meyer lemon dressing and serve.

2 tbsp. Meyer lemon juice
1 tbsp. lemon zest
1 tsp. sugar
1 medium garlic clove, grated
1/3 cup extra virgin olive oil
1 tsp salt

1/4 cup pomegranate seeds
1/4 cup chopped roasted pistachios
1/4 cup chopped fresh parsley
